The Short Answer: EVERYTHING
We don't need to go anywhere or do anything to be immersed in nature. We are nature. It is always with us and we can never be without it.
However, we can disregard it, ignore it, and divorce our thinking and actions from much of it (as many have done over the past 100+ years as a species).
Experiencing and immersing in some types of nature is a privilege and not possible for some depending on their geography, physical abilities, safety, resources, and more. For example: going deep into a forest if you live in a city can be tough, and spending time at the ocean if you live in a landlocked region.

Our bodies are nature. The food we eat is nature. The air we breathe and the water we drink is nature. Stop and look around you: we cannot escape it in the best and most wonderful way!
There are many adaptations of the Design Thinking process. For the purpose of this Guide, we will be aligning to the well-known and respected Stanford D.School 5-step process. We have chosen this process for many reasons, one of which is a discrete emphasis on the Empathy phase. Others might call this phase Discover or Understand. This language works for different people and places, and all of it underlines the need to begin in an explorative, curious, and expansive way.
Nature Centered Design, however, is distinctly different than Design Thinking. While D.Thinking, or Human-Centered Design, looks to design with and for other humans, Nature-Centered Design allows us to design with and for the billions of natural beings and elements that make up our entire universe from the beginning of time, until now. How might we co-create with dinosaurs, brainstorm ideas with atoms, and test solutions with fire? Not until a cycle like NCD have we been able to do so. But don't just take my word for it, Nature has been modeling this cycle in many, many ways.
